Enjoying the Foods of Fall

Last year, I did a Friday Five: Favorite Fall Foods post except it was in November so my mind was already on Christmas-time deliciousness. You can see that post here. Today, I am truly all about fall foods, primarily making cleaner versions of my favorite fall foods.
It is still averaging about 90 degrees around here, but I am ready to move on. This week, I’ve started in on a bit of baking, roasting, and today, I’m crock potting.
I must start with an obvious fall favorite here. Not surprisingly, I am talking about pumpkin. I am a part of a collective board on Pinterest that features pumpkin flavored recipes. This is where I find many fun pumpkin recipes.
#1 PUMPKIN PUMPKIN AND MORE PUMPKIN
This week, I made some wonderful Pumpkin Pie Energy Bites. I found the recipe on Pinterest by paleogrubs.com and made only one tweak. I did not have any pecans and I happened to be working on a sponsored post for Mighty Nut Powdered Peanut Butter. Perfect timing…I replaced 1/2 cup of pecans with 1/4 cup of powdered peanut butter. I also rolled them in unsweetened coconut flakes. DELICIOUS!
I also made some delicious Grain-Free Pumpkin Spice Muffins. I found this recipe on Pinterest as well, by insonnetskitchen.com. I, once again, replaced 1/4 cup of pecans with 1/4 cup of Mighty Nut Powdered Peanut Butter.
We definitey cannot forget about the ever-famous Pumpkin Pancakes! I made these using The Fit Body Bakery Power Up Pancake Mix. My review and giveaway here. Giveaway ends on 10/20/2015.
#2 ROASTED VEGETABLES
My favorite veggies are roasted. I like to roast most all vegetables. This one is a new one for me. I am not sure where beets have been my entire life. Luckily, Chrissy at snackinginsneakers introduced me to them through her eBook, Journey to Healthy Eating . I now know that beets have many health benefits, they are tasty, and oh so pretty! I roasted these in olive oil, rosemary, basil, oregano, and salt.
Last week, was the first time I saw the cranberries in our grocery store this season so I grabbed a few bags and threw them in the freezer. I usually grab a bunch every time I shop anytime between now and when they quit selling them. My main use for them is to add them to my smoothies. Cranberries are a good additive and nice change from my summer smoothie mix-in of tropical fruits. I also like to use them when baking muffins or breads.
#4 CROCK POTTING
I just love the ease and convenience of having dinner in the crock pot all day. This is especially true during a busy day when I am not able to be home until evening. I have definitely missed crock potting this summer.
This morning, I threw into the crock pot:
3 boneless, skinless, chicken breasts
1 15 oz can of tomato sauce
1 1/2 cups of water
4 tablespoons of Cajun seasoning
2 tablespoons dried oregano
1 tablespoon onion powder
1 cup of celery chunks
